  • Coffee time chat ☕️(this is my attempt at a Cuban coffee by the way, have you ever had one?)⠀ ⠀ I have a hard time being on Instagram while I'm in gastrointestinal distress. Last Sunday started out in San Francisco with lots of pastries and ended in tears (literally).⠀ ⠀ Most of the time, my biggest struggle living with a j-pouch instead of a colon is eating too much. ⠀ ⠀ When I started to have a lot of abdominal spasms and pain I assumed I tried one too many pastries. But as the day passed and my symptoms persisted without me eating anything, I thought maybe it wasn't so simple. It was reminding me of how I would get during a really bad ulcerative colitis flare.⠀ ⠀ By the time I was waiting in line for dinner I was hungry again. Underneath the pain and spasms, I also had hunger pains. So I decided to eat. ⠀ ⠀ And then the pain ratcheted up to scary levels. I know I scared the friends I was with. ⠀ ⠀ My family members are the only ones who have ever seen me at that level of pain before. I'm usually suffering from other symptoms that keep me inside and away from others when I reach scary high pain levels.⠀ ⠀ This really hit with no warning and I was away from home and unprepared. Luckily I have awesome friends who ran all over Target to get me things to help me. I just feel bad they had to see me like that. ⠀ ⠀ Right now I'm on antibiotics and anti-spasm medication. If the antibiotics don't work then I'll have to have a sedated scope of my j-pouch. My diet is very small and simple and I'm trying to add at least one new thing every day (this morning it was half a banana).⠀ ⠀ It kind of puts a downer on my birthday this Sunday and I've already decided I'll be celebrating in June instead because I want to eat good food, go wine tasting, and eat cake 😋⠀
  • Happy Friday!! ⠀ ⠀ This beauty is No-Churn Goat Cheese Ice Cream with Bourbon Soaked Cherries. It's almost similar to a float because I was VERY generous with the bourbon soaking liquid 🥃🍒😉⠀ ⠀ For some reason, this has never made it onto my blog. So here's the recipe. You can find a link in my profile @megiswell for the bourbon soaked cherry recipe. ⠀ ⠀ No-Churn Goat Cheese Ice Cream⠀ Ingredients ⠀ 8 ounces goat cheese ⠀ 4 ounces cream cheese ⠀ 1 (14-ounce) can sweetened condensed milk ⠀ 1/2 teaspoon Morton Kosher Salt ⠀ 2 cups heavy whipping cream ⠀ 2 tablespoons bourbon ⠀ ⠀ Instructions ⠀ In a large stainless steel bowl, beat the goat cheese and cream cheese together until light and fluffy. ⠀ Beat in the sweetened condensed milk and salt until creamy and smooth. ⠀ Whip the heavy whipping cream and bourbon together until stiff peaks form. Mix about 1/3 of the whipped cream into the cheese mixture on high speed, beating until combined and smooth. ⠀ Slowly fold the rest of the whipped cream in until smooth.   • This Mexican Corn Salad is an extremely old recipe on my blog so forgive the photography 🙈 ⠀ ⠀ But it's good and it's appropriate for this week because of Cinco de Mayo. ⠀ ⠀ It goes with Goat Cheese and Veggie Stuffed Poblanos. Here's the recipe for the salad and you can check out the full recipe on my blog (link in profile @megiswell).⠀ ⠀ Mexican Corn Salad⠀ ⠀ Ingredients:⠀ 6 ears of corn unhusked⠀ 2 tablespoon extra-virgin olive oil⠀ juice from 2 limes⠀ 1 teaspoon lime zest⠀ 1/2 teaspoon Kosher salt⠀ 1/2 teaspoon black pepper⠀ 2 teaspoons ancho chile powder⠀ 1/4 teaspoon smoked Spanish paprika⠀ 1/4 teaspoon cumin⠀ 1/4 cup chopped cilantro⠀ 1/2 cup cotija cheese (heaping 😉)⠀ ⠀ Instructions:⠀ Preheat oven to 450 degrees Fahrenheit. Roast unhusked corn on a baking sheet, turning occasionally for 15 minutes until heated through and tender.⠀ Take corn out and let it cool completely.⠀ Shuck the corn and cut the kernels from the cob. Set aside.⠀ In a large bowl, mix together the olive oil, lime juice and zest, salt, pepper, ancho chili powder, smoked Spanish paprika, and cumin.⠀ Add the corn kernels and mix until coated.⠀ Pour onto two baking sheets covered in parchment paper or nonstick baking mats.⠀ Roast for 20 minutes or until some kernels begin to brown.⠀ Let cool on the baking sheets.⠀ Put the corn in a serving bowl and toss with the cilantro and cotija cheese. This Make Ahead Wild Rice Salad is perfect for any occasion or season and is especially good to pair with any seasonal picnic or holiday charcuterie boards.⠀ ⠀ Recipe link in profile @megiswell or hit save to keep the recipe for later ⬇️⠀ ⠀ Salad Ingredients ⠀ 1 tablespoon vegetable oil ⠀ 1 shallot, diced ⠀ 1 fennel bulb, thinly sliced (reserve the fronds for later) ⠀ 2 cloves garlic, crushed ⠀ 1/2 cup white wine ⠀ 1 cup wild rice ⠀ Parmesan cheese rinds ⠀ 2 cups vegetable broth ⠀ 1/2 teaspoon Kosher salt ⠀ ⠀ Dressing Ingredients ⠀ 1/2 tablespoon maple syrup ⠀ 1/2 tablespoon yellow miso paste ⠀ 1/2 tablespoon unsweetened rice vinegar ⠀ 1/2 tablespoon vegetable oil ⠀ ⠀ Salad Instructions ⠀ Heat the vegetable oil in a large skillet over medium heat. Once it begins to shimmer, add the shallot and cook for 2 minutes. ⠀ Add the fennel and cook for 3 to 5 minutes, until it has softened. ⠀ Toss in the garlic and cook for about 30 seconds. ⠀ Pour in the white wine and stir, breaking up any bits on the bottom of the pan. Add the wild rice and the parmesan cheese rinds and stir until coated and mixed well. ⠀ Pour the vegetable broth in along with the salt and bring to a boil. Cover, reduce heat to low, and cook for 45 minutes + another 40 minutes if you desire softer rice. ⠀ Turn off the heat and let the rice sit covered for 10 minutes while you prepare the dressing. ⠀ Transfer the rice to a large serving bowl and drizzle with the dressing, mixing well. Mix in finely chopped reserved fennel fronds. ⠀ ⠀ Dressing Instructions ⠀ Combine all the ingredients in a mason jar and shake until emulsified.
