Spaghetti Squash Bowls with Turkey Sausage and Marinara Sauce: ditch the carbs and the fatty meat for a healthier meal that’s just as flavorful.

  • Preheat oven to 400 degrees Fahrenheit.
  • Cut the spaghetti squash in half and scoop out the seeds.
  • Drizzle with some olive oil and sprinkle with some salt and pepper.
  • Place the two halves cut side down on a baking sheet and cook for 45 to 50 minutes until the squash is tender.
  • While the squash cooks you can make the Easy Homemade Marinara in 20 minutes. Once the marinara sauce is done, set it aside.
  • Heat a medium sized skillet over medium heat. Once it’s warm, add the turkey sausage and break it apart with a spatula. Cook for 6 to 8 minutes, until there is no more pink.
  • Add the marinara sauce and continue cooking until it’s hot. Turn off the heat and set aside.
  • Once the squash is done, use a fork to scrape the squash, creating the “spaghetti”.
  • Top with the marinara and turkey sausage mixture, sprinkle with parmesan cheese, and cook in the oven for 5 to 10 more minutes, until the cheese is melted. Top with some parsley and serve.
