Easy Homemade Marinara in 20 Minutes

These Spaghetti Squash Bowls are the first recipe I’m sharing that uses the Easy Homemade Marinara from my last post.

I like to make big batches of it and store it in the freezer for even quicker meals. But for this dish, it’s easy to make the sauce while the spaghetti squash bakes.

I still feel like I’m running around hectically, adjusting to freelance life, bidding on jobs, and trying to make sense of the whole process. Comfort food is still very much the thing for me right now.

Fast is good for the days I need to power through. But right now I need a slow day, a slow weekend. I need things to roast or simmer away on the stove while I sip on a latte or cappuccino.

I think these Spaghetti Squash Bowls bring a little bit of both to the table. Squash has to cook for almost an hour in the stove, but this recipe has very little fuss involved. So it’s both fast and slow.

Spaghetti Squash Bowls with Turkey Sausage and Marinara Sauce

Spaghetti Squash Bowls with Turkey Sausage and Marinara Sauce: ditch the carbs and the fatty meat for a healthier meal that’s just as flavorful.

Ingredients

  • 1 spaghetti squash
  • 1/2 16 oz package Jennie-O Italian Style Turkey Sausage
  • 2 cups Easy Homemade Marinara in 20 Minutes
  • 1/2 cup parmesan cheese
  • 1/4 cup roughly chopped parsley

Instructions

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Cut the spaghetti squash in half and scoop out the seeds.
  3. Drizzle with some olive oil and sprinkle with some salt and pepper.
  4. Place the two halves cut side down on a baking sheet and cook for 45 to 50 minutes until the squash is tender.
  5. While the squash cooks you can make the Easy Homemade Marinara in 20 minutes. Once the marinara sauce is done, set it aside.
  6. Heat a medium sized skillet over medium heat. Once it’s warm, add the turkey sausage and break it apart with a spatula. Cook for 6 to 8 minutes, until there is no more pink.
  7. Add the marinara sauce and continue cooking until it’s hot. Turn off the heat and set aside.
  8. Once the squash is done, use a fork to scrape the squash, creating the “spaghetti”.
  9. Top with the marinara and turkey sausage mixture, sprinkle with parmesan cheese, and cook in the oven for 5 to 10 more minutes, until the cheese is melted. Top with some parsley and serve.
