Spiced French Toast

Cardamon, cloves, cinnamon, and turmeric are steeped in heavy cream to create a tasty batter for this Spiced French Toast.

Ingredients

  • 1.5 cups heavy cream heavy whipping cream, or half and half
  • 4 bruised cardamom pods
  • 1 cinnamon stick
  • 3 cloves whole
  • 1 tablespoon turmeric root peeled and chopped
  • 6 eggs
  • 2 teaspoons vanilla extract
  • pinch of salt
  • 6 slices to 8 challah or brioche loaf 1 inch thick
  • 4 tablespoons butter

Instructions

  • Preheat oven to 250 degrees and place a wire wrack on a baking sheet (this is to keep the done toast warm if you can't fit it all in a skillet.
  • Pour the heavy cream into a small saucepan and add the cardamom pods, cinnamon stick, cloves and turmeric. Heat over medium heat until it is almost boiling. Remove from heat and let steep for 20 minutes.
  • Strain the heavy cream into a mixing bowl and discard the spices. You can do this the night before if you want to save time in the morning.
  • Add the eggs and vanilla extract to the heavy cream and whisk together.
  • Place the bread in a shallow baking dish and pour the egg mixture over bread.
  • Soak the bread for 10 minutes and then turn over and soak the other side another 10 minutes.
  • Heat 2 tablespoons of butter in a skillet over medium heat. Depending on how many slices can fit in your skillet, add the bread slices and fry 2 to 3 minutes on each side. Place done toast on the wire racks in the oven as you finish the rest.
