Sausage, Egg, and Cheese Breakfast Sandwich

This Sausage, Egg, and Cheese Breakfast Sandwich is a hand-held meal that tastes delicious and fills you up for hours. I've supplied a Breakfast Sausage recipe that I use if you are also trying to stay away from processed meats. The seasonings for the sausage patties has a slight peppery kick with a little bit of sweet, bringing to mind some store-bought favorites without the preservatives or refined sugars.

Ingredients

Breakfast Sausage

  • 1 pound ground pork
  • 1/2 teaspoon kosher salt
  • 1/8 teaspoon garlic salt
  • 1/2 teaspoon fresh ground black pepper
  • 1/4 teaspoon white pepper
  • 1/2 teaspoon ground thyme
  • 1/2 teaspoon dried rubbed sage
  • 1 teaspoon honey
  • 1/4 teaspoon ground cloves or allspice
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon onion powder
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon cayenne pepper
  • 1/8 teaspoon red pepper flakes
  • 1 tablespoon butter or olive oil

Sausage, Egg, and Cheese Breakfast Sandwich

  • 1 Cheddar and Chives Biscuit or store-bought biscuit of choice
  • 1 Breakfast Sausage Patty or store-bought sausage of your choice
  • 1 egg
  • 1 teaspoon yogurt
  • 1 teaspoon honey
  • 1 tablespoon butter
  • 2 slices thin cheddar cheese

Instructions

Breakfast Sausage

  1. Combine all the ingredients in a bowl and blend by hand until well seasoned throughout.
  2. Lay out plastic wrap and place the seasoned ground pork in the center and wrap it up tight. Place in an airtight container and let sit in the refrigerator for 24 hours.
  3. Heat a tablespoon of butter or olive oil in a frying pan over medium-low heat. Shape sausages into flat patties and cook for about 5 to 7 minutes on each side, until they are brown.
  4. Place patties on a plate with a paper towel and pat excess oil off. Eat or store in an air tight container to use for later.

Sausage, Egg, and Cheese Breakfast Sandwich

  1. Place Cheddar and Chives Biscuit on a baking sheet and put it in the oven. Set oven to 350 degrees Fahrenheit. The biscuit will heat and crisp up while you are cooking the egg. When the oven reaches 350 degrees, turn it off and put a slice of cheese on top of it. Keep in oven until you are ready to put your breakfast sandwich together.
  2. Whisk egg in a small bowl. Add 1 teaspoon yogurt and 1 teaspoon honey. Mix well.
  3. Place a greased egg ring, biscuit cutter, or mason jar lid ring in a small frying pan. Heat 1 tablespoon of butter over high heat and swirl the pan around to evenly distribute the melted butter.
  4. Slowly pour a little bit of the egg mixture into the ring until it has just covered the surface. Pause a moment and then continue pouring very slowly, stopping for a couple of seconds if any leaks form in order to allow the egg to cook.
  5. When you have poured all the egg mixture into the ring, turn the heat to medium-low. Add the already cooked sausage patty to the pan. Continue cooking for around 10 minutes or until there is only a small amount of uncooked liquid on the top surface.
  6. Remove egg ring, biscuit cutter, or mason jar lid ring. I use a small spatula and run it along the inside of the metal ring until I am able to pull it loose. After you have removed the egg ring, flip the egg over to cook the other side. Place the second slice of cheddar cheese on top.
  7. Take the biscuit out of the oven and place the egg on top of it, followed by the sausage patty.
