Stir Fried Mushrooms with Garlic and Ginger

These Stir Fried Mushrooms with Garlic and Ginger are extremely flavorful as well as quick and easy. The whole side takes less than 10 minutes to make and is something I like to build more filling meals around. But you can eat them as is. I know I do.

Most of the time on my blog, really short recipes like this get included as a step in a larger dish. But I got a lot of feedback from the reader survey I sent out, and people want more fast and easy main dishes and sides and snacks. So this is a really quick side and snack but it can also be paired with other things to make for a more filling meal.

Stir Fried Mushrooms with Garlic and Ginger

Most of the time, I use regular white or brown mushrooms in my cooking. They are always at the grocery store, they’re cheap, and they get the job done. But occasionally I like to shell out the bigger bucks for some different varieties.

I’m extremely jealous of people who have a “mushroom guy or gal” at their local farmers market. That’s where you can really get some good mushrooms without feeling like you’re spending money on a luxury item.

Because I don’t have a mushroom guy or gal, I buy a packaged specialty trio from Mycopia that my grocery store carries. It’s actually a pretty cool company. I didn’t realize they’re based in Sebastopol, a quirky little town that I visited sometimes when I lived in Santa Rosa.

The mushrooms get a quick stir-fry over high heat with a little bit of vegetable oil before adding garlic, ginger, and a little bit of garlic chili sauce. I then add a little fish sauce. This really helps give the mushrooms a very meaty caramelized flavor with a bunch of umami.

Soy sauce or liquid aminos would do fine as well, but fish sauce is my top choice for getting the best flavor.

These go great as a topping for Brown Rice Mushroom Congee with Sardines or inside Spring Rolls with Stir Fried Mushrooms and Dandelion Greens. I’ll be sharing both those recipes eventually, so look out for them. Meanwhile just enjoy, because they’re very tasty.

Stir Fried Mushrooms with Garlic and Ginger

These Stir Fried Mushrooms with Garlic and Ginger are flavorful, easy, and take less than 10 minutes to make.

Total Time 10 minutes

Ingredients

  • 1/2 tablespoon vegetable oil
  • 8 ounces mushroom medley mix I used a mix of Velvet Pioppini, Forest Nameko, and Nebrodini Bianco
  • 1/2 tablespoon garlic, pressed
  • 1 teaspoon ginger, peeled and grated
  • 1/2 teaspoon chili garlic sauce
  • 1 tablespoon fish sauce*
  • 1 tablespoon green onion (only the green part), sliced

Instructions

  • Thinly slice the mushrooms or if they are small and grouped together at the base, cut off the base to break them apart. 
  • In a large skillet, heat the vegetable oil over high heat. 
  • Add the mushrooms and stir-fry until they begin to soften and release their moisture, about 2 to 3 minutes. 
  • Add the garlic, ginger, and chili garlic sauce. Cook for about 30 seconds to 1 minute or until the garlic begins to brown but not burn and get crispy.
  • Add the fish sauce and cook for about 30 more seconds, tossing to mix well. 
  • Take the skillet off the heat and toss in the green onions.
  • Serve as a side, snack, or as a topping or filling for soups and wraps.

Notes

*Substitutes for fish sauce if you are vegetarian or vegan are soy sauce, Tamari, or liquid aminos.

    I only had porcini and shitake, so i used those 2, i was skeptical about the fish sauce, wanted to put soy sauce instead, but decided to try with fish sauce. It was really great, i used the dish as a side for my sweet potato congee, so delicious. Thank you for the recipe.

    Next time I’ll add more variety of mushrooms. I think i will try will oyster, enoki, shitake and white mushrooms.

    I love mushrooms so much that I would simply prepare yours and place them on top of a piping hot bowl or ramen and be utterly satisfied. Agreed about the fish sauce:) Pinned and will be enjoyed with or without a mushroom gal (we have Trader Joe’s, sometimes they carry awesome mushrooms:) and an Asian store)
