Pistachio Ice Cream Sandwiches with Thin Mint Cookies

Usually, I only post on Tuesdays but I decided to throw in this really easy non-recipe for today. On Saturday, I posted a picture to my Facebook page showing what I did to my Girl Scout Thin Mint cookies and everyone loved it.

Really I was just playing around. While grocery shopping I passed the ice cream section and noticed Halo Top, which had been stuck in my head for a while. There was a day on Instagram where probably about a third of the people I follow were posting pictures of Halo Top.

Obviously the advertising worked because I snatched up the pistachio flavor right away. And was blown away by how much I liked it. Because of my surgeries, having post-operative ileus two times and pancreatitis once, fat has kind of been my enemy. It’s harder for my body to process.

Trust me when I say I’ve tried lots of low-fat ice creams. And I haven’t liked them very much. They’re icy, watery, don’t have much flavor, and are missing that fluffy creamy goodness of traditional ice cream. But Halo Top is fluffy. Creamy. Not icy. And incredibly soft.

Plus it has lots of protein and the pistachio flavor has 240 calories for a whole pint. Now the serving size is actually a ½ cup. But this means, if you want, you can actually have a whole pint of ice cream and not feel like you’re going to die afterward.

Okay, now I want to have a girl’s night in. Where we wear pajamas, watch movies, and eat whole pints of ice cream. And have these Pistachio Ice Cream Sandwiches. Who’s down?

Pistachio Ice Cream Sandwiches with Thin Mint Cookies

These Pistachio Ice Cream Sandwiches with Thin Mint Cookies are the perfect delicious and lower calorie miniature dessert.

Prep Time 5 minutes

Ingredients

Instructions

  • Place a heaping tablespoon of ice cream on one cookie.
  • Top with another cookie and press together until the ice cream has spread toward the edge.
  • Sprinkle or roll the edge of the cookie into crushed pistachios, coating the ice cream.
  • Repeat with the other two cookies.
  • Eat then for a messy small treat OR put the ice cream sandwiches in the freezer for 10 to 15 minutes to let the ice cream set. 

Notes

You can obviously make more if you want (for yourself and others). The serving size for Thin Mints is 4 cookies (161 calories) so this is just if you want a small and easy dessert for yourself.
There are about 15 calories in 2 tablespoons of Halo Top Pistachio Ice Cream.

    I’ve been waiting for this recipe ever since you posted the photo hahaha. I LOVE ice cream sandwiches, and the storebought kind all have horrid ingredients! This is so clever.. and man I wish I had some thin mints! (Maybe I’ll try it with the Ritz crackers lol)

    1. I’m glad I followed through and decided to post it! Especially since Thin Mints are a “seasonal” ingredient. I’m chasing down the fist Girl Scout I see or making the ritz cracker peppermint substitute.

  3. Hope you are feeling okay, these pistachio ice cream sandwiches are great. My kids love chocolate cookies and pistachio ice cream you combined both in this recipe. I would like to give it a try.
