The last post included a Beer Cheese Sauce made with American wheat ale, cheddar, and smoked Gouda for a sweet n’ smoky explosion of flavor that I turned into a soup.
Leftover Cheese Sauce Broccoli Soup
The Cheese Beer Sauce that went with this Puff Pastry Sausage Braid made a lot. After using it on my baked potatoes, I decided to make a broccoli soup with it as well.
The soup is a little thin because I decided to use broth instead of yogurt. I didn’t want the yogurt to take away flavor from the cheese sauce.
Even though it’s not a thick hearty soup, the flavor is there. The sweet n’ smoky taste from the Gouda comes through and then I spiced it up a little by throwing in some white pepper.
I have a Vitamix so I just blended it on high for 7 minutes until steam started coming out of the top. You can either have a completely smooth soup or you can lightly pulse some reserved broccoli florets in after the long blend.
Broccoli or Broccolini are both fine. I used leftover broccolini so it was already steamed. If you have a Vitamix though just throw the raw in and it will be cooked.
Sprinkle your favorite crackers on top, grate some more cheese on top, and serve.

Ingredients
- 1 cup vegetable broth
- 1 cup broccolini or broccoli, steamed or grilled raw works too with a Vitamix
- 1/2 cup cheese beer sauce
- 1/4 teaspoon Morton Kosher Salt
- 1/4 teaspoon white pepper
- 1/3 cup broccolini or broccoli florets*
Instructions
- Add everything to a high-speed blender (like a Vitamix or similar) and blend on high for 7 minutes until the soup is hot and steaming. If you want a completely smooth soup, add the 1/3 cup florets along with everything else. But if you want some broccoli solids, add the 1/3 cup florets after blending for 7 minutes. Pulse them in on a low speed to mix them in and then serve the soup hot.

I just tried making broccoli soup in my Vitamix last week! I didn’t love my variation, I need to try your cheesier version instead! YUMMMM… (I’m always looking for a sub. for Panera’s!!)
