Recipes that use pistachios or other green foods are always popular, but they really start to shine mid February to April. Or that’s my opinion. I imagine it has a lot to do with holidays like Mardi Gras, St. Patrick’s Day, or Easter. But I also think that by mid February, a lot of people are craving spring. And green is spring’s palette. Most of the time I just have cereal for breakfast. But I want to treat myself to some of these while I sip on my coffee. Are you a donut, muffin, quick bread, or oatmeal type person?

I was very attracted to snack recipes that I can take with me on hikes. Once the land dries out a a little, I’m sure I’ll be packing some of these in my lunch box.

I can usually only think of sweet things to pair pistachios with, probably because I love savory/sweet combos. But there are plenty of things you can do with pistachios that don’t include cookies (or muffins, cakes, and ice cream).
