S’mores White Russians

These S’mores White Russians are seriously decadent. Forget dessert. These are dessert AND an alcoholic beverage. Vodka, Kahlua, spiced marshmallow simple syrup, semi-sweet chocolate, and roasted marshmallows all combine to make a warm and toasty drink that will leave you feeling a little tipsy.

I’ll drink to that…or not.

Now that I’ve totally sold you on these (right?) I sadly have to mention that I won’t be having these. Sadness. Today, I’m recovering from my colonoscopy. Because of my decline in health, my GI doctor wanted to see for herself what is going on. She actually hasn’t been able to draw her own conclusions about my colon. I was diagnosed in a different city by a different doctor and I know she has always felt a little weird about that.

Needless to say, I definitely won’t be partaking in these drinks (or any other) this New Year’s Eve. I find it funny that I’m actually ahead in my post schedule for once but the posts don’t reflect what I can eat or drink at the moment. And ultimately, that is always the problem with making long term plans with an autoimmune disease.

Anyway, I always have nothing to do for New Year’s. It’s one of those annoying holidays where I feel the urge to go out and dress up but never have a reason to. I never have any plans or my plans always fall through. So I’ve pretty much given up and choose to do something cozy at home like watch television or read. Super exciting, I know. But why not spice it up a little? Or should I say, booze it up?

My favorite part is the spiced marshmallow simple syrup. It’s super delicious. When I first get my drink it looks like this:

S'mores White Russians

These S'mores White Russians are seriously decadent. Forget dessert. These are dessert AND an alcoholic beverage. Vodka, Kahlua, spiced marshmallow simple syrup, semi-sweet chocolate, and roasted marshmallows all combine to make a warm and toasty drink that will leave you feeling a little tipsy.
Servings 1 to 2 drinks (using a double shot glass)
Prep Time 20 minutes
Cook Time 5 minutes
Total Time 25 minutes

Ingredients

Marshmallow Simple Syrup

  • 1 cup water
  • 1 cinnamon stick
  • 2 cardamon pods bruised (optional)
  • 2 cups marshmallow fluff

S'mores White Russians

  • 1/2 cup finely crushed graham cracker
  • 1 tablespoon sugar
  • 1 teaspoon cinnamon
  • 2 parts vodka
  • 1 part kahlua
  • 1 part marshmallow syrup
  • 1 part heavy cream
  • 1 tablespoon chopped semi-sweet chocolate
  • Roasted marshmallows for topping

Instructions

Marshmallow Simple Syrup

  • In a small saucepan combine the water, cinnamon stick, cloves, and cardamon pods. Bring to a boil over medium heat. Cover, reduce heat to low, and simmer for 20 minutes. I took the cardamon pods out after ten minutes. I didn't want their flavor to over power the cinnamon.
  • In a heat proof bowl, add two cups marshmallow fluff. Add 1/4 cup of the simmering water and mix until combined. Keep adding the water until the marshmallow simple syrup is still thick but can be poured.

S'mores White Russians

  • Mix the graham cracker, sugar, and cinnamon together in a plastic zip lock bag. Pound and roll with a rolling pin until the graham crackers are finely crushed and mixed with the sugar and cinnamon. Wet the rims of the glasses in water and then dip them in the graham cracker mix. Set aside.
  • In a small saucepan, combine the vodka, Kahlua, marshmallow syrup, heavy cream, and semi-sweet chocolate. Whisk together on low-medium heat until hot. Meanwhile, if desired, place marshmallows on a baking sheet and broil until toasted. Pour the drink into glasses and top with the roasted marshmallows. Serve immediately.

Notes

Mix the drinks first and then let everyone add more marshmallow simple syrup if needed. I always add a little more. When roasting the marshmallows in the oven, place them on top of foil or parchment paper or use a miniature blow torch if you have one.
